The Morris Lapidus-designed hotel opened in 1954 on Millionaire’s Row of Collins Avenue and has welcomed many illustrious guests over the years. In 2008, the hotel underwent a huge revamp and renovation project, so now guests of Fontainebleau can enjoy a slice of Golden Era glamour while steeped in state-of the-art modern luxury.

Bleau Bar

The lobby lounge provides late afternoon entertainment as a subtle background. The center bar provides the largest selection of glamorous cocktails from the rich history of the resort’s past as well as eclectic modern spins on the originals. A comprehensive selection of wines by the glass further complements the sophisticated yet energetic atmosphere generated in this space.

Glow Bar

Two full service bars are centrally located in the pool areas offering a complete selection of beers, cocktail favorites and frozen beverages. A further complement of tailored menus for food service include appetizer platters, crudités, tapas, chilled seafood platters and a petit selection of the Fresh and La Cote menus.

Hakkasan

This award-winning restaurant makes its U.S. debut at Fontainebleau Miami Beach. Hakkasan offers diners a diverse menu of New World wines and sake to complement Yau’s inventive Chinese fare. This sleek and contemporary restaurant is located on a fourth floor rooftop that affords guests stunning views of the beach and Atlantic Ocean. The name “Hakkasan”: ‘Hakka’ refers to the people from the New Territories of Hong Kong while ‘san’ is the respectful Japanese form of address. (Reservations required).

Scarpetta

Fontainebleau Miami Beach’s Italian restaurant and celebrity chef Scott Conant’s outpost of his recently opened restaurant of the same name in New York City. The restaurant features ocean and poolside views, a wraparound veranda as well as casual dining areas and a cocktail lounge. A light, airy and sophisticated interior displays a refined nautical palette, with elements that reference mid-century Italian design. The restaurant’s bold architectural features highlight Conant’s regional menu comprised of clean, crisp flavors prepared in layers to reflect the quality of locally sourced ingredients. Known for coaxing the most sublime flavors out of the simplest ingredients, Conant relies on Florida’s bounty of farm-fresh and organic produce to craft menus of surprising complexity. StripSteak by Michael Mina

The Miami Beach outpost of Chef Michael Mina's extremely successful, award-winning Las Vegas restaurant, StripSteak - an innovative and contemporary steakhouse concept. StripSteak offers a dynamic dining and bar scene perfectly in sync with Fontainebleau’s reputation as the preeminent destination for sophisticated cuisine and contemporary cocktails. The two-story, indoor-outdoor venue, is sexy, fun, elegant and engaging - a perfect complement to the hotel’s stellar collection of signature restaurants. Located off the historic chateau lobby in the heart of the hotel, StripSteak is very much a steakhouse for today’s adventurous diner - offering a la carte cuts of steak (many of them from the hotel’s on-site aging room and butcher shop) as well as signature specials that go far beyond traditional steakhouse fare. Executed by chef de cuisine Derrick Roberts, the vast menu runs the gamut, overflowing with options. No steakhouse experience would be complete without a killer raw bar; StripSteak's includes selections sourced locally through BleauFish - the hotels innovative ocean-to-table live catch program.
